Breakfast Casserole

Farm Fresh Eggs in Lynden

This is one of our favorite weekend breakfast recipes.  The buttery crescent roll base takes the flavor of this egg bake over the top.

It’s a great brunch recipe to take to a potluck because it’s great for feeding a crowd.

I mean how can you go wrong with sausage, crescent rolls, cheese, eggs?  You can play around with this one to suit your preferences!  Use your favorite veggies and cheese and make it your own!

Instructions

  1. Preheat oven to 375 degrees F. Spray a 13×9 inch baking dish with cooking spray.
  2. Add the sausage to a large skillet and place it over medium-high heat.
  3. Break the sausage apart with a wooden spoon. Cook until well browned. Drain off any excess fat.
  4. Unroll the crescent roll dough and place it at the dish’s bottom. Pinch the seams of the dough together and press out the dough to cover the bottom of the dish.
  5. Spread the cooked sausage over the dough.
  6. Add the eggs, milk, salt, and pepper in a large bowl. Whisk until well combined.
  7. Pour the eggs over the sausage. It is ok if some of the eggs get under the dough.
  8. Sprinkle the top with cheese.

Bake uncovered for 40 minutes. Let rest 5 minutes before slicing.

You can also add more veggies or some of our bacon.  Or add it on the side.  Yummmy
