Cooking On a Blackstone

The Best Beef Cuts to Cook on a Blackstone Griddle

If you’ve recently purchased a Blackstone griddle, you’re probably looking for the best cuts of beef to cook on it. The good news? A Blackstone is one of the best ways to cook beef. Its large flat cooking surface creates an incredible crust while locking in juices, making everything from burgers to premium Wagyu steaks taste amazing.  At Oostema Farmstead, we raise 100% grass-fed Wagyu, American Wagyu, and Angus cattle right here on our family farm in Lynden, Washington. These are our favorite cuts to cook on a Blackstone, along with a few tips to help you get restaurant-quality results at home.

Ribeye: The King of the Blackstone

If you’re only cooking one steak on your Blackstone, make it a ribeye.

The beautiful marbling melts as it cooks, creating a rich, flavorful crust that’s hard to beat. The flat top allows every inch of the steak to make contact with the hot surface, giving you an even sear from edge to edge.

Best for:

  • Steak night
  • Date nights
  • Special occasions

Cooking Tip:
Preheat your Blackstone until it’s hot, lightly prep the surface with tallow, and cook the steak about 2–4 minutes per side, depending on thickness. Let it rest for at least 5 minutes before slicing.

 New York Strip

The New York Strip delivers a bold beef flavor with just enough marbling to stay tender and juicy.

It’s an excellent choice if you enjoy a steak with a little more bite than a ribeye while still getting that beautiful caramelized crust.

Cooking Tip:
Cook over medium-high heat and slice against the grain for maximum tenderness.

 Flat Iron Steak

Flat Iron is one of the best values in the meat case.

It has excellent marbling, cooks quickly, and is incredibly tender when prepared correctly. It’s perfect for weeknight dinners when you want something special without spending all evening cooking.

Top Sirloin

Top Sirloin is leaner than ribeye but still packed with flavor.

It’s a versatile steak that’s perfect for feeding the whole family and works beautifully sliced over salads, potatoes, or vegetables.

Beyond Steaks

A Blackstone isn’t just for steaks. Some of our favorite meals come together in minutes.

Smash Burgers

This is where the Blackstone really shines.

The hot cooking surface creates crispy edges while keeping the inside juicy. American Wagyu burger patties are especially delicious because the extra marbling adds incredible flavor.

Top with cheese, grilled onions, mushrooms, or bacon for an unforgettable burger night.

Carne Asada

Thin slices of marinated beef cook in just minutes on a Blackstone.

Serve with tortillas, fresh salsa, avocado, and cilantro for an easy weeknight meal.

Fajitas

One of the best things about cooking on a flat top is making your entire meal in one place.

Cook peppers and onions alongside your steak, then serve with warm tortillas and your favorite toppings.

Stir Fry

Thinly sliced beef cooks incredibly fast on a Blackstone.

Add broccoli, mushrooms, peppers, onions, or snap peas along with your favorite stir fry sauce for a quick dinner that’s ready in under 20 minutes.

Don’t Forget Leftover Brisket

One of our favorite Blackstone meals starts with yesterday’s barbecue.

Dice leftover smoked brisket and cook it until the edges become crispy. It’s fantastic in:

  • Breakfast hash
  • Breakfast burritos
  • Loaded fries
  • Grilled cheese sandwiches
  • Street tacos

Sometimes leftovers become the best meal of the week.

Tips for Cooking Beef on a Blackstone

A few simple tricks will help you get the best results every time.

  • Preheat the Blackstone before adding your beef.
  • Lightly use tallow on the cooking surface.
  • Avoid moving the meat too soon let it develop a crust.
  • Use a meat thermometer instead of guessing.
  • Let steaks rest for 5–10 minutes before slicing.
  • Always slice against the grain for maximum tenderness.

Why Wagyu Performs So Well on a Blackstone

One reason Wagyu is so popular is its exceptional marbling.

Unlike many traditional beef cuts where fat is concentrated around the outside, Wagyu has fine streaks of fat throughout the muscle. As it cooks, that marbling melts into the meat, creating an incredibly tender, juicy steak with rich beef flavor.

A Blackstone’s even heat allows that marbling to render beautifully while producing a steakhouse-quality crust.
