What is “Groentesoep”?
Groentesoep met Balletjes is a typical Dutch Vegetable Soup. Literary translated Vegetable soup with balls.
Vegetable soup (‘groentesoep’) is a clear soup based with a vegetable or beef stock, filled with several vegetables and we love it with vermicelli and meatballs (‘met balletjes’). In the past, a small bowl of soup was often served as an entree at dinner time. Nowadays, it is also served as a complete meal together with bread or at lunch.
I make meatballs straight from the hamburger, just a small ball in the palm of your hand, and drop them in the boiling water. The little meatballs, of course, can be made in a variety of ways, but I make a simple version.
Add contents of Honing Soup Mix package to 6 cups of cold water and bring to a boil while occasionally stirring with a whisk. Once the broth is boiling, add carrots, celery, vermicelli, and meatballs. Reduce to a simmer and cook until vegetables are fork-tender, and meatballs are cooked through.
Partially cover the pot with a lid and bring to a slow boil for 10 minutes.
Serve with bread, ham buns or crackers.
*This makes a great freezer meal also.
