A nourishing, flavor-packed way to celebrate the quality of pasture-raised beef.
When you start with premium Wagyu, raised naturally on open pasture, the best thing you can do is let the flavor shine. This hearty steak salad brings out the richness of the beef while pairing it with fresh, vibrant ingredients that complement a clean, health-conscious lifestyle. Whether you’re serving it for a relaxed weeknight dinner or a sunny weekend lunch with friends, this recipe feels as good as it tastes.
For the salad:
1 lb Wagyu Top Sirloin Steak, boneless and about 3/4 inch thick
1 tbsp garlic & herb or onion & herb no-salt seasoning
1 medium red onion, sliced into 1/2-inch thick rounds
6 cups fresh baby spinach
1 medium tomato, cut into wedges
2 hard-boiled eggs, peeled and sliced
For the dressing:
2 tbsp honey mustard
2 tbsp olive oil
1 tbsp water
2 tsp garlic & herb or onion & herb no-salt seasoning
2 tsp fresh lemon juice
Make the dressing: In a small bowl, whisk together the honey mustard, olive oil, water, seasoning blend, and lemon juice. Reserve 1/4 cup of this mixture for drizzling over the salad. Brush the remaining dressing over the onion slices.
Season the steak: Press the dry seasoning evenly onto all sides of the steak.
Grill:
Place the steak in the center of a medium-hot grill (or preheated gas grill).
Arrange the onion slices around it.
Grill steak, covered, 7 to 11 minutes (or 8 to 13 minutes on a gas grill), turning occasionally, until it reaches your desired doneness: 145°F for medium rare, 160°F for medium.
Grill onions for 10 to 12 minutes, turning occasionally, until tender and slightly charred.
Assemble:
Thinly slice the steak against the grain.
Arrange baby spinach evenly on 4 plates.
Top with tomato wedges, grilled onions, steak slices, and hard-boiled egg slices.
Drizzle each plate with the reserved dressing.
To hard-boil perfect eggs: Cover eggs with water in a saucepan. Bring to a boil, then remove from heat, cover, and let stand for 15 minutes. Immediately run cold water over the eggs or place in an ice bath until cooled.
