Beef Liver


The liver is a polarizing cut of beef. Love it or hate it, people’s opinions on the liver are typically very strong.

Like most organ meats, beef liver is rich, dense, and lean. This gives it a strong flavor and makes it ideal for low-fat diets. It’s also versatile. While the most common serving method is fried (usually with onions), the liver also lends itself well to stew. However you serve it, an important tip for the liver is to not overcook it. It’s best to leave a touch of pink in the middle so the meat stays tender and the flavor mild.
