Smash Wagyu Burgers

There’s nothing quite like a good burger,especially when it’s made with rich, flavorful Wagyu and sizzled in its own tallow. Smash burgers are all about simplicity: thin, crispy edges, juicy centers, and that perfect sear you only get from a hot skillet and quality fat. This recipe is quick, satisfying, and packed with flavor, just how we like it.

Wagyu Smash Burgers

Ingredients:

  • 1 lb ground Wagyu beef 

  • Wagyu tallow (for greasing and flavor)

  • Salt & pepper

  • 4 burger buns (brioche is great)

  • Cheese (American, cheddar, or your favorite meltable cheese)

  • Optional toppings: sliced onions, pickles, lettuce, tomato, ketchup, mustard, mayo


Instructions:

  1. Prep the beef:

    • Divide ground beef into 4 loosely packed 4 oz balls. Don’t overwork the meat, just gently roll into balls and refrigerate while you prep the skillet.

  2. Heat the pan:

    • Use a cast iron skillet or griddle. Heat it over medium-high until it’s screaming hot.

    • Add 1-2 teaspoons of Wagyu tallow to the skillet and let it melt and coat the surface.

  3. Smash the burgers:

    • Place the beef ball in the hot skillet.

    • Immediately smash it flat with a burger press, sturdy spatula, or heavy-bottomed pan. Press hard to get a thin patty with good contact.

    • Sprinkle with salt and pepper.

  4. Sear and flip:

    • Let the patty sear for about 90 seconds, until edges are crispy and deep brown.

    • Flip and top with cheese. Cook another 45–60 seconds, just until the cheese melts and the other side has a nice crust.

  5. Toast the buns:

    • While the burgers cook, toast your buns in another pan or in the skillet with a bit of Wagyu tallow until golden.

  6. Assemble:

    • Place patties on the buns with your favorite toppings. Serve immediately.


Tips:

  • Don’t season the beef before forming into balls, season right after smashing for best texture.

  • Wagyu tallow gives an insane depth of flavor and enhances the crust. Don’t skip it!
