Ingredients:
For the Marinade:
- 1/2 tsp Kosher salt (coarse)
- 1 tsp dried parsley
- 1/2 tsp ground black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp Worcestershire sauce
- 1 tbsp olive oil
For the Steak Bites:
- 1 to 1.5 lbs beef tenderloin, cut into bite-sized cubes
- Kosher salt for seasoning
- 8 oz blue cheese, crumbled
For the Caramelized Onions:
- 4 large sweet onions, sliced
- 2 tbsp butter
- 1 tbsp olive oil
Instructions:
Marinate the Steak:
- In a bowl, combine the beef cubes with kosher salt, parsley, black pepper, onion powder, garlic powder, Worcestershire sauce, and olive oil.
- Mix well to coat the meat evenly. Cover the bowl with plastic wrap and let it marinate for up to 1 hour.
Prepare the Caramelized Onions:
- Slice the onions and set them aside.
- In a heavy-bottomed skillet, heat the butter and olive oil over medium-high heat. Add the onions and cook for 3-4 minutes to soften.
- Reduce the heat to medium-low and stir the onions every 5 minutes. Allow them to cook until they are deep golden brown and sweet, about 30-40 minutes.
Cook the Steak Bites:
- Preheat a cast-iron pan over high heat and sprinkle a teaspoon of kosher salt into the hot pan (no oil needed).
- Add the marinated steak cubes to the pan in batches, making sure not to crowd them. Sear each side for about 3 minutes to form a crust, without moving them around.
- Once both sides are seared, toss the steak bites in the pan for another minute to ensure they cook evenly on all sides.
- Remove the steak bites from the pan and set aside. Repeat with the remaining steak bites.
- (Optional broiler method: Place the steak bites on a baking sheet and broil on high for 1-2 minutes per side, or until they reach your preferred doneness. Watch carefully as this method cooks quickly.)
Assemble the Dish:
- Arrange the cooked steak bites on a baking sheet.
- Top each steak bite with a spoonful of caramelized onions and a small amount of crumbled blue cheese.
- Place the baking sheet under the broiler for just a minute to melt the blue cheese slightly.
Serve:
- Remove the steak bites from the broiler and transfer them to a serving platter.
- Add a cocktail pick to each bite for easy serving.
- Serve immediately and enjoy!
