For consumption within the next 48 hours, store your Wagyu beef in the refrigerator. We recommend thawing it in its original packaging to preserve quality. Depending on the cut size, a thawing period of 12-24 hours is necessary. Avoid thawing your Wagyu under hot water or in the microwave. If your package includes multiple steaks, you may refreeze any unthawed portions in a freezer-safe Ziploc bag for future use. Due to the rich marbling and intense flavor, recommended portions of Wagyu are generally smaller than typical beef cuts. Ideally, consume within a year for peak freshness.
COOKING:
For an optimal experience, we suggest cooking Wagyu beef to medium rare, though personal preferences vary. Allow the steak to reach room temperature for about 30 minutes before cooking to ensure even heating. Lightly coat your pan with butter or olive oil, though a bit of fat trimmed from the steak itself can enhance the flavor. Seasoning should be minimal, as salt and pepper often suffice to highlight Wagyu’s natural taste. Avoid overwhelming high-end steaks with heavy sauces or marinades. For cooking times, sear rare steaks for three minutes per side and medium-rare for four minutes per side. Use a spatula to flip steaks to retain moisture. GRILLING:
When grilling, cook the meat over indirect heat to prevent flare-ups due to the high fat content and lower melting point of Wagyu. Consider the reverse sear method, starting with indirect heat before finishing with a direct sear for perfect crispness. After cooking, allow your steak to rest for a few minutes before slicing to reabsorb and retain its juices.
