Wagyu Tallow

More Than Just Steak: Meet the Magic of Wagyu Tallow

Our Wagyu isn’t only about the steaks, it’s the whole animal that brings value to the table. One of the most underrated treasures? The tallow. This rich, golden fat adds serious flavor to just about anything you cook. From crispy roasted veggies to flaky pie crusts, Wagyu tallow gives everyday meals a boost you can taste.

What is Wagyu Tallow?

It’s the rendered fat from our pasture-raised Wagyu cattle. Because of the rich marbling in the beef, the fat melts down into a smooth, clean oil that’s packed with flavor. It’s been a favorite among chefs for years, and once you try it, you’ll see why.

Here’s how we love to use it in our kitchen:

1. Frying
Why it stands out: With a high smoke point and rich flavor, Wagyu tallow gives you that crispy, golden finish you usually only get from a restaurant fryer, way better than canola or vegetable oil.

2. Sautéing & Stir-Frying
Why it stands out: Unlike olive oil or butter, tallow adds a subtle, savory richness that brings out the natural flavors in your veggies and proteins, without burning.

3. Roasting Vegetables
Why it stands out: Roasting with tallow gives veggies crisp, caramelized edges and a savory finish that olive oil just can’t match.

4. Baking
Why it stands out: Swap it in for butter or shortening and you’ll get flakier crusts and more tender biscuits, with a clean flavor that doesn’t overpower.

5. Sauces & Gravy
Why it stands out: Tallow creates silky, rich sauces with a depth you won’t get from butter alone perfect for gravies or pan drippings.

6. Cakes & Cookies
Why it stands out: Using tallow in baked goods gives them a delicate crumb and melt-in-your-mouth texture, all without that greasy feel you sometimes get from oil or butter.

Why Our Tallow is Different

Our tallow comes from grass-fed, grass-finished Wagyu raised right here on our family farm in Lynden. No shortcuts, no additives, just pure, clean fat from animals we care for daily.

More stable than most oils, it’s great for high-heat cooking. And thanks to its higher level of monounsaturated fats, it’s a healthier option than most seed oils.

Curious to try it?

You can pick some up right here on the farm or when you place your next beef order online. It’s a small jar with big impact. Once you cook with it, you’ll wonder how you ever went without it.

Whatever you’re doing this week, I hope you are having fun and making lots of memories!
